Gluten-Free Recipes You Can MORE Than Tolerate!

It can be hard to find gluten-free recipes to help those of us with gluten intolerance or allergy to feel somewhat normal. Breads go such a long way towards giving us that full feeling — "filling in the gaps," so to speak — creating convenience (as in quick and easy sandwich lunches!) and just comforting us. And desserts are all the more enjoyed, when the rest of our meals can seem limited at times!

I think it's helpful to modify our expectations somewhat when it comes to GF recipes. We need to realize that wheat does have a special flavor and texture that we like because it's what we've been used to, and that gluten-free baked goods are not going to taste or feel exactly the same. That's not to say they won't be very good — GF foods can be delicious! But let's not whine and complain when our rice bread doesn't rise quite as high as our wheat bread used to, or act shocked when — gasp! — we find that buckwheat pancakes don't taste like the kind made with Bisquick!

On the other hand, how wonderful it is to live in a land and era where we have access to such a wide variety of tasty, nutritious grains (and non-grains) other than wheat, along with recipes to help us prepare them! If we're going to be gluten-intolerant, it couldn't have happened at a better time or place.
